2x whole roasted red peppers (seeds removed)
2 dried ancho chilies
1x dried chile de arbol
2x in chipotle chiles adobo
1x cup boiling water
1 clove garlic peeled
Juice of half a lemon
Salt to taste
2 tablespoons olive oil
Place the dried chilies in a heatproof bowl and pour the boiling water over the chilies. Let it sit for 20 to 30 minutes until the chilies have softened. Save the chili water.
Once the chilies are soft, cut off the top of the chilies and remove the seeds from the inside. Add to the container of the Chop Jet™ along with the chipotle chilies in adobo, garlic and lemon juice.
Blend, and keep pouring in olive oil to thicken the sauce. If desired, add 1-2 tablespoons of the reserved chili water to thin the sauce slightly. Season to taste with salt and additional lemon juice. The harissa will keep refrigerated for a couple of weeks.
3/4 cup toasted walnut halves
1-2x cloves of garlic, peeled
2x cups pea shoots, packed
1x cup fresh mint leaves
1/2 cup extra virgin olive oil
salt & pepper
Place the walnut halves and garlic cloves in the container of the Chop Jet™. Chop the nuts and garlic about 10 times, or until all the pieces are chopped small. Add the pea shoots and mint leaves. Pulse the mixture 10-15 times, or until you notice a dry paste forming.
Season the mixture with salt and pepper and replace the lid of the Chop Jet™. Add the virgin olive oil. Once you have added everything, turn off the Chop Jet™ and scrape down the sides of the bowl with a spatula. Replace the lid and blend the pesto a few more times to make sure everything is fully incorporated.
Scrape the pesto into a container if you're not using it right away. Cover the surface with a small film of olive oil to preserve the color. Put a lid on it and keep it in the refrigerator until you use it.
Green Curry Paste
2x tablespoons coriander seeds
1x tablespoon cumin seeds
1x tablespoon white peppercorns
8 ounces green Thai chiles, partially seeded and chopped
4x large shallots (about 3/4 pd), pealed and chopped
3 ounces coriander root
1/4 cup peeled and chopped galangal root
3 tablespoons peeled and chopped fresh turmeric root
2 stalks lemongrass, tender bottom part only
3 kaffir lime leaves, chopped
2 heads garlic, cloves peeled
1 1/2 teaspoons kosher salt
1 tablespoon shrimp paste (optional)
Important note: Do not handle Thai chilies or large quantities of other hot peppers without gloves. Seeding Thai chilies is not for the faint of heart - they are tiny and incredibly hot. That's why we recommend serranos as an alternative.
Combine the coriander seeds, cumin seeds, and white peppercorns in a small, dry skillet over medium heat. Toast them until fragrant and the white peppercorns take on some color, about 3 minutes. Set them aside to cool.
Combine the cooled, roasted spices along with the remaining ingredients in the container of the Chop Jet™. As you puree the ingredients, the shallots and garlic will release a lot of moisture, but the mixture will still be quite dry. Scrape the edges of the container periodically to make a smooth paste.
Puree the ingredients until they are homogeneous and reasonably smooth. If you like, you can pour the paste into ice cube trays and freeze. Take out the frozen cubes and store them in a zipper lock bag. You can store some of the fresh paste in a container in the refrigerator, but you should use it up within two weeks.
4 medium sized red bell peppers
2 (or more!) garlic cloves
3 chili peppers
olive oil, around 1/3 cup
3-4 tablespoon water
3-4 tablespoon apple cider vinegar
salt & pepper to taste
Wash and dice the red bell pepper and eggplant. Then spread the vegetables on a baking tray lined with baking paper, brush with a little olive oil and roast at 200 degrees Celsius for about 20 minutes, or bake until soft. Then let cool.
Cut garlic and chili peppers with Chop Jet™ afterwards, skin the peppers and puree them together with the garlic, chilies, eggplant, apple cider vinegar and water with a blender to make a paprika cream.
Heat the remaining olive oil in a pan and add the paprika cream. Saute for about 20 minutes, stirring constantly. Then season with salt and pepper and pour into tightly sealed jars.

I ordered 2 'Chop Jet Portable Food Choppers' on the 15th May (just over 2 weeks ago) and have not yet received them so I am unable to tell you what I think of them. Hopefully they will arrive soon!
